Ingredients
- 1 Pepper
- 200g Chickpeas
- 1 Onion
- 4 Cloves Garlic
- 2tbsp Oil
- 200g Brown Rice
- 2tbsp Sesame Seed Oil
- 4tbsp Soy Sauce
- 1tbsp Cumin
- 1tsp Cayenne Pepper
- 🧂Salt & Pepper
Method
- Cover the rice in water in a small pan and cook according to the package instructions.
- Finely chop the onion and garlic and add to a frying pan with the oil. Fry until they start to brown.
- Chop the pepper into small cubes and add to the pan along with the chickpeas (assuming they’re from a can; if not, pre-cook these.) Cook for 5 mins.
- Once the rice is cooked, drain and then add to the frying pan, along with the remainder of the ingredients. Mix well and cook for a further 5 minutes.
